In the heart of downtown Toronto, surrounded by the city's finest bakeries, restaurants, hotels, and pastry boutiques, sits one of Canada's most influential culinary institutions: George Brown College. For decades, the Centre for Hospitality and Culinary Arts at George Brown has been producing baking and pastry graduates who go on to work at the cutting edge of the industry — not just in Toronto, but around the world. It is a place where professional ambition meets classical technique, and where chocolate is treated with the same seriousness as any other fine art.

On Friday, November 20, 2026, from 9:00 AM to 12:00 PM, George Brown's most accomplished pastry students will bring that tradition to life on the competition floor of the Salon du Chocolat Toronto. For visitors attending the event at the Toronto Congress Centre, this is one of the most anticipated moments of the entire four-day program — a chance to see tomorrow's chocolate professionals compete today.

The H113 Program: Advanced Patisserie Meets Business Acumen

George Brown's flagship Baking and Pastry Arts Management program (H113) is a two-year diploma designed by industry leaders to deliver what few programs can offer: truly advanced patisserie training combined with the management skills needed to run a successful baking operation. It is not enough, George Brown believes, to produce talented pastry chefs — the college prepares graduates who can lead, manage, and build enterprises around their craft.

Students in the H113 program develop hands-on mastery across a sweeping range of disciplines: chocolate and confections, wedding and specialty cakes, modern bakery café production, tarts and pastries, plated desserts, artisan bread and breakfast pastries, petits fours, laminated doughs and viennoiseries, ice cream and sorbets, and artisan sugar confections. Each of these areas forms a pillar of the professional pastry world, and George Brown students are trained to work confidently across all of them.

A Campus That Lives Inside Toronto's Culinary Scene

Location is not incidental to George Brown's approach — it is central to it. Being situated in downtown Toronto means students are constantly immersed in one of the most dynamic food cities in North America. Their training happens not in isolation but in direct proximity to the industry they are training to join. Externships and industry placements take students inside the very establishments that define Toronto's culinary reputation, building professional contacts and practical experience before graduation.

George Brown's reputation extends well beyond the city. The college's international alumni network spans Michelin-starred kitchens, major hotel groups, boutique patisseries, and culinary schools across four continents — a testament to the global relevance of a George Brown education in the pastry arts.

Advanced French Patisserie: The Next Level

For graduates who want to push further, George Brown offers the Advanced French Patisserie postgraduate program (H413) — one of the few offerings of its kind in Ontario. Open to graduates of any culinary or baking and pastry management program, H413 takes already-trained professionals and immerses them in the highest level of French pastry technique, preparing them for roles at the absolute summit of the confectionery world. This ladder of excellence — from foundations to diploma to postgraduate specialization — is precisely what makes George Brown a complete pastry education ecosystem.

Competition as a Milestone

When George Brown students compete at events like the Salon du Chocolat Toronto, they carry with them years of rigorous training, the influence of top baking professionals, and the creative energy that only comes from learning inside one of the world's great culinary cities. The student competition on November 20 gives them a platform that few institutions can offer their students: a live, professional-grade event, judged in front of an engaged audience of chocolate enthusiasts, industry professionals, and media.

Come and see what a George Brown education looks like in action. The student chocolate competition takes place on Friday, November 20, 2026, from 9:00 AM to 12:00 PM, at the Toronto Congress Centre. Get your tickets to the Salon du Chocolat Toronto today.
