Callebaut

Ask any pastry chef which chocolate they reach for when consistency, workability, and flavor all have to align perfectly, and one name comes up again and again: Callebaut. For over a century, this Belgian chocolate house has been the quiet workhorse behind countless desserts in restaurants, patisseries, and chocolate shops around the world.

A Belgian Legacy: The Callebaut History

The Callebaut story starts not with chocolate, but with beer. In 1850, Eugène Callebaut founded a small family brewery and mill called "De Ploeg" in the Flemish village of Wieze, Belgium. It was his grandson, Octaaf Callebaut, who would change the family's destiny: in 1911, in that very same building, Octaaf began producing chocolate bars instead of beer — and a Belgian icon was born.

By 1925, the company had moved into producing couverture chocolate — the high-cocoa-butter chocolate prized by professional pastry chefs and chocolatiers for its smooth workability and rich, consistent flavor. From the very beginning, Callebaut committed to a whole-bean roasting technique, preserving the full range of aromatic oils locked inside the cocoa husk, a method the company still honors today.

In 1996, Callebaut merged with the French company Cacao Barry to form the Barry Callebaut group — today the world's largest chocolate manufacturer. Yet despite becoming part of a global powerhouse, Callebaut has remained proudly rooted in its origins: every batch of its core range is still crafted bean-to-bar in Wieze, the same small Belgian town where Octaaf first started roasting cocoa over a century ago.

The Recipes and Innovations That Built an Icon

The Classics: 811, 823, and W2

Octaaf Callebaut's original formulas are still the backbone of the brand today. 811 (dark chocolate), 823 (milk chocolate), and W2 (white chocolate) are numbers so iconic in professional kitchens that chefs often refer to them by code alone. These recipes have been passed down through generations of Callebaut craftsmen in Wieze, prized for their workability — the ability to melt, temper, and set with total predictability, batch after batch.

Callets: A Small Invention With a Big Impact

In the late 1980s, Callebaut introduced callets — small, drop-shaped pieces of chocolate engineered specifically to melt faster and more evenly than traditional blocks or bars. For any chocolatier working against the clock, callets quietly transformed daily workflow in professional kitchens around the world.

Origin Couvertures: Arriba, Java, and Sao Thomé

Long before "single-origin" entered the culinary spotlight, Callebaut was already sourcing rare cocoa beans from specific regions to create distinctive origin couvertures — chocolates like Arriba (Ecuador), Java (Indonesia), and Sao Thomé, each prized for its own aromatic personality.

The Chocolate Academy: Where Craft Becomes Mastery

Callebaut opened its first Chocolate Academy™ in Wieze over 25 years ago. What began as a single training space has since grown into a global network of nearly 20 Chocolate Academy centers, spanning cities from Paris and Tokyo to Chicago, Dubai, and right here in Canada. At the Chocolate Academy, working chefs, chocolatiers, and pastry professionals train hands-on in crystallization, molding, dipping, ganache-making, and advanced techniques — exactly the kind of environment where craftsmanship is passed from one generation to the next.

Callebaut at the Salon du Chocolat

Callebaut has been an official partner since the very first Canadian edition in Montréal, supporting an event built around discovery, craftsmanship, and the celebration of chocolate in all its forms. As the Salon du Chocolat brings its "From Paris to Toronto: World of Wonders" edition to the Toronto Congress Centre this November, Callebaut's continued presence reflects a shared philosophy: that the best chocolate experiences happen when expertise, craftsmanship, and genuine passion come together in person.
